On Friday 12 September, we’re serving six gourmet courses, each thoughtfully paired with Killara’s handcrafted gins, known for their award-winning quality and precision distilling. Begin with a gin-infused cocktail on arrival, then savour dishes designed to enhance each spirit’s unique character.

Cured salmon on blini with lemon crème fraîche
2nd course – Triple Juniper Gin
Seared scallop on cauliflower purée with citrus zest

3rd course – Navy Gin
Crispy pork belly with apple and fennel slaw (served on a spoon)
Crispy fish bite tostadas with preserved lemon aioli
4th course – Barrel Aged Gin

Grilled haloumi with honey drizzle and cracked pepper
